Homemade Enchilada Sauce Recipe

0
enchilada sauce

This recipe of homemade Enchilada Sauce is very easy to make with pantry ingredients, it only requires about 5 minutes of prep time, and it tastes so flavorful and delicious. Moreover, It has the perfect blend of simple spices to make the best enchiladas ever. It’s not a hot and spicy sauce unless you want it to be. And this recipe can easily be doubled or tripled if you are making a lot of enchiladas.

The secret ingredient in this recipe is red chili powder (not cayenne). Red chili powder is a mild spice that gives dishes an earthy flavor without being overpowering. It’s also high in iron, which helps reduce anemia and other conditions related to low levels of iron in the body. If you’re looking for a healthier alternative to traditional condiments like mayonnaise or butter, try using red chili powder as part of your next dish.

Ingredients

  • 2 tbsp avocado oil or olive oil
  • 2 tbsp all-purpose flour
  • 1/4 cup chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 2 cups chicken or vegetable stock
  • salt to taste

Directions to Make the Enchilada Sauce

Cook:

  1. Put oil in a small pot, and heat to a medium-high temperature to prepare the roux and seasonings.
  2. Cook the flour for 1 minute while whisking continuously.
  3. Stirring continuously, add the cumin, oregano, cumin seed, chili powder, and garlic powder.
  4. Cook for an additional minute.

Simmer:

  1. Add the stock little by little while continually whisking to ensure no lumps.
  2. Then, while the sauce is still covered for the next 10-15 minutes, lower the heat to medium-low to maintain the simmer (the sauce should still be faintly bubbling).
  3. Cook the sauce a little longer until it simmers.

Season and Serve:

  1. Taste the sauce and add salt if necessary to season. (I usually add 1/2 teaspoon of fine sea salt, although the salt in the sauce may differ based on your stock brand.)
  2.  Include right away in your preferred dish and savor.

Tips and Notes!

Chili powder: The serving size is accurate. Additionally, this recipe asks for typical American chili powder rather than cayenne, as was already explained. Unlike foreign chili powders, which are often 100% cayenne, American chili powder is really a combination of spices that are normally relatively mild. (and very spicy). Therefore, if you reside elsewhere, please specifically search for an American-style chili powder mixture.

Option for those who avoid gluten: Feel free to swap out the all-purpose flour with a 1-to-1 gluten-free flour blend. Alternatively, you might use a slurry of cornflour to thicken the sauce. (equal parts cold water and cornstarch whisked together, then added to the sauce once it has reached a simmer).

Storage Instructions: Allow the sauce to cool to room temperature before storing. After that, put it in a mason jar or other food storage container and store it in the fridge for up to 5 days. I don’t suggest storing this sauce since it separates somewhat once it has frozen.

This recipe is enough for two batches of enchiladas (which means there will be leftovers). If you want a spicier sauce, add an extra pinch of cayenne pepper or red pepper flakes when mixing everything together. You can adjust the proportions if your family likes spicy things but not too hot.

Oven Baked Kale Chips Recipe

0
Kale chips

The kale craze has been going on for a while, but it’s still gaining ground as a superfood. The best, easiest and most nutritious way to get more kale into your diet is to eat it raw or lightly cooked. This recipe for oven-baked kale chips will make a delicious addition to any snack plate or party appetizer platter. Oven-baked kale chips are easy to make with just three simple ingredients: fresh kale, olive oil and sea salt (or another type of seasoning). You can also experiment with other herbs and spices if you want something different from plain old sea salt.

Kale is a leafy green vegetable that grows in cool climates and is related to cabbage, Brussels sprouts and collards. It’s one of the most nutrient-dense foods, containing many vitamins and minerals and few calories.

Ingredients

  • 1 large bundle of curly green or purple kale
  • 1-2 Tbsp melted coconut or olive oil
  • Seasonings of choice (i.e. pinch sea salt, 1 tsp cumin powder, 1 tsp chilli powder, 1 tsp curry powder, 1 Tbsp nutritional yeast, etc. // measurements listed per 1 large bundle kale)

Directions to Make Baked Kale Chips

  • Set oven to 225 degrees Fahrenheit (107 C). If you have a convection oven, use it to shorten the cooking time and make the chips even crispier.
  • Kale should be carefully rinsed, dried, torn into little pieces, and any big stems should be thrown away.
  • Add to an extra large mixing bowl, then season to taste with oil.
  • Use your hands to properly spread the oil and spices while you fully mix the ingredients.
  • To help the kale crisp up during baking, spread it out evenly on 2 big baking sheets (you may use less or more if you want to change the batch size).
  • To achieve equal baking, flip the pans around after 15 minutes of baking and softly mix or toss the kale.
  • Bake the chips for not more than 5-10 minutes or until your chips look crispy and golden brown as well.
  • After being taken out of the oven, the chips will get even crispy. Remove and let cool somewhat.
  • Enjoy right away. Fresh is ideal.
  • For two to three days, keep leftovers covered at room temperature.

Final Words

These leaves are so high in fibre (about twice as much as other leafy greens like spinach or chard). And since fibre helps digestion, it can help prevent constipation and other digestive problems such as GERD or Crohn’s disease.

But the best trick here is to use enough olive oil so that each leaf gets coated in it but not too much so that there isn’t enough moisture left over for the body of the veggie.

This recipe makes enough for two large servings or four small portions—it all depends on how big of a bowl you use. Of course, if you’re making this dish as part of your weekly meal prep, then feel free to make smaller batches so that everyone gets their fair share.

Ingredients

  • 2 cups rolled oats
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp. salt
  • 1 3/4 cups almond milk (or non-dairy milk of choice)
  • 2 eggs
  • 1/3 cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 3/4 cup shredded carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Directions to Make Carrot Cake

  • Prepare an 8×8 casserole dish and preheat the oven to 375°F. Adjust cook time if using a different size.
  • Mix the rolled oats, baking soda, cinnamon, ginger, and salt in a large basin.
  • Combine the almond milk, eggs, maple syrup, and vanilla in a medium bowl.
  • Add half of the raisins and pecans, as well as the carrots.
  • Stir the dry ingredients after adding the liquid mixture.
  • Pour the mixture into the baking dish and push down to ensure the oats are soaked well.

  • Bake for about 40 to 45 minutes, uncovered, until gently browned.

  • Keep it in the fridge if you wish to.

Variations

  • Make it creamy: Add a tablespoon or two of cream, half-and-half, or whole milk, along with the sugar to make it creamy.
  • To make it creamier: Boil the oats in whole milk rather than water. If you select this option, use caution and don’t allow it to come to a boil fully.
  • Bring on the coconut: Add a tablespoon or two of coconut milk to the sugar mixture to give it a beautiful coconut flavour and loads of creaminess.
  • Add extra coconut: Add extra coconut by sprinkling grated or shredded coconut on top or by stirring it in.
  • To make it nuttier: Add a spoonful of almond butter to the sugar mixture to make it nutty.
  • Change the nuts: Instead of walnuts, use roasted chopped almonds, cashews, or pecans.
  • Change the fruit: Instead of raisins or currants, use dried cranberries, dried blueberries, currants, chopped dates, or dried figs.
  • Frost it: As a type of “frosting,” put a spoonful or two of sweetened whipped cream cheese on top of the baked carrot cake oats.

Ingredients

  • 10 ounces pasta
  • 5 tablespoons butter
  • 1 cup heavy cream
  • 4 cups freshly grated parmesan cheese
  • salt and pepper to taste
  • 1 pound shrimp peeled and deveined, tails optional
  • 1 teaspoon minced garlic
  • 2 tablespoons chopped parsley

How to make Shrimp Alfredo Pasta

  • Firstly, cook the pasta as per the instructions written on the package. Drain and keep aside.
  • Take a small bowl and grate the cheese in it over low heat. Keep it aside and allow the cheese to cool.
  • Take a large saucepan and cook the butter until melted.
  • Now, add the garlic stirring continuously for 1 minute.
  • Add the cream in it and whisk together to combine well.
  • Bring it to a simmer and cook again for 3-4 minutes, stirring continuously.
  • Now, add the parmesan cheese turning the heat to low. Season the mixture with salt and pepper.

Recipe Notes

  • Parmesan Cheese: Pre-shredded parmesan should not be used since it won’t melt as well or taste as wonderful as freshly grated.
  • Healthier Alfredo sauce: The sauce won’t be as creamy if you substitute milk or half-and-half, so you could wish to thicken it with a cornflour slurry. Instead, try the One-Pan Skinny Chicken Alfredo.
  • Seafood Alfredo: This seafood Alfredo will taste amazing with seared scallops added!
  • Chicken and Shrimp Alfredo: Add some grilled chicken to the Alfredo sauce with chicken and shrimp!
  • Broccoli and shrimp Alfredo: Add steamed broccoli or your favourite vegetable before serving.
  • Cajun Shrimp Alfredo: Before cooking, season shrimp with cajun spice. If you don’t want your Alfredo sauce to be hot, use less cayenne pepper—1 teaspoon is OK.

Pineapple Whip Recipe

Pineapple Whip
Pineapple Whip

Pineapple Whip is a light, refreshing dessert that’s quick and easy to whip up. It is also known as the dole whip because it’s reminiscent of Disney’s famous Dole Whip; the Pineapple Whip is one you can make at home and enjoy any time of the year.

The recipe calls for freshly picked pineapple, lemon juice, sugar, creamy fruits, lime juice, salt, and your favorite ice cream. You’ll also need some ice cubes or an ice cream maker.

Our Pineapple Whip recipe takes less than 10 minutes to make from start to finish, including cleanup time. And it only requires three ingredients: pineapple juice (or other fruit juice), heavy cream, and vanilla extract. You can get these on Amazon or any local supermarket — we recommend fresh fruits like pineapples and other creamy fruits.

Ingredients

  • 4 ounces pineapple juice
  • 1 big scoop vanilla ice cream
  • 2 cups frozen pineapple chunks
  • 2 tablespoons sugar
  • splash of lemon juice
  • pinch of salt

How to make Pineapple Whip

  • Blend the ingredients in a blender (in the order given) until ultra-creamy and smooth, about 3 minutes.
  • If required, press down the pineapple pieces.
  • The time has come to pour into dessert glasses.
  • Nevertheless, I like to transfer the mixture to a piping bag fitted with a 1M “star” tip after freezing it for 30 to 40 minutes (to get that iconic Dole Whip swirl.)
  • Put a swirl in glasses. (Freeze the swirling whip for 20 minutes to help the soft serve keep its form longer.)

Notes and Tips

  • The nicest, creamiest texture will come from eating it right away, but you can freeze it for up to three months in an airtight container. For best results, use an immersion blender or a handheld electric mixer to smooth out the mixture and reduce its ice texture after letting it thaw somewhat on the counter, around 15 to 20 minutes.
  • If you want to make enough of the pineapple whip, make sure to double up your ingredients.
  • Using a piping bag to swirl, use a really large nozzle because the mixture will be thick.
  • A fairly strong blender is required for maximum results because frozen pineapple can be challenging to pulse. I cherish my Vitamix. Both Ninja and Blendtec will do the trick. Let the pineapple defrost a little if you’re using a standard blender.
  • Make a Dole Whip Float out of the Dole Whip. Put some Dole Whip in the middle of a glass, add some pineapple juice on top, and then garnish with a maraschino cherry.
  • To get the recognizable Dole Whip swirl, freeze the mixture for 30 to 40 minutes before transferring it to a piping bag fitted with a 1M “star” tip.
  • Wrap a cloth around the piping bag if you notice any freezer burn on your skin during piping.
  • Not a fan of pineapples? Almost any frozen fruit and its corresponding fruit juice, such as strawberry, lemon, orange, raspberry, or mango, may be used to prepare.

Chicken Egg Drop Soup Recipe

0
Egg drop Soup

The key to a good Chicken Egg Drop Soup is simplicity. You want it to be easy and fast, so there are no long cooking times—heat some broth in a pot and add some vegetables along with the eggs. Eggs are one of those foods that don’t need much prep time before they’re ready to eat; all you have to do is crack them open and cook them on low heat until they’re done. Add some seasoning if you’d like, but keep it light, so your soup doesn’t get too spicy. You can easily prepare these at home without any hassle.

The easiest way to make egg drop soup is by following the directions written below. You can also add in other ingredients, but don’t overdo it. If you have time, homemade broth is always best.

Ingredients

  • 4 cups chicken stock
  • 1/2 teaspoon sesame oil
  • 3/4 teaspoon salt
  • 1/8 teaspoon sugar
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon turmeric
  • 2 tablespoons cornstarch
  • 3 eggs
  • 1 scallion
  • 1/4 teaspoon MSG

Instructions For Chicken Egg Drop Soup

  • In a medium soup pot, boil the chicken stock.
  • Add the sesame oil, MSG, salt, sugar, and white pepper (if using).
  • Now, add the turmeric or, if using, 5 drops of yellow food coloring. While optional, this will give the soup a rich, restaurant-style golden hue.
  • Taste the soup and make any necessary spice adjustments.
  • The combination of cornflour and water is then added. Although cornflour settles rapidly, ensure the water and cornflour are well combined.
  • If you don’t stir the soup often as you pour in the slurry, cooked starch clumps will form in your soup.
  • Add more or less starch if you want your soup thicker or thinner.
  • You may also add the starch in a few tiny portions and check the consistency after letting the soup boil for a few minutes.
  • Now, it’s time for the most exciting part, which is the egg.
  • This recipe asks to softly beat the egg, producing white and yellow egg swirls.
  • The amount of “egg flowers” you obtain will depend on how quickly you mix the soup after adding the egg, whether they are huge or little (i.e., swirly bits of egg).
  • Stirring the soup in a circular motion with a spoon can help you add the egg gradually.
  • Topping with your favorite toppings, serve the soup in bowls.

To sum up!

If you love egg drop soup, but don’t want to spend hours making it from scratch, try this easy recipe. It’s delicious and can be made in minutes. This chicken egg drop soup is born from a love of the soup, many trips to my favorite Chinese restaurant, and many questions.

If you’re looking for a simple version that takes fewer than 10 minutes and requires no cooking, know that all liquids will evaporate when heated above 100°F (37°C). So if you want your soup thickened with eggs without any cooking, whisk them into some cold water before adding them to the hot liquid—the heat from the bowl alone will cook them. The result should be light and fluffy with small pieces of protein floating throughout rather than large chunks floating at the bottom like traditional egg drop soup, which tends to be too heavy and dense for most people’s tastes.
