Ingredients

  • 1/4 teaspoon kosher salt
  • 2 ounces finely grated cotija cheese

Recipe Notes!

REMOVE THE DAIRY: Use less vegan Parmesan than asked for in the recipe because it has a stronger, saltier flavour to replace the Cotija. or simply leave out the Cotija.

MAKE IT VEGAN: Use the vegan sour cream for the mayo and a dash of vegan Parmesan for the Cotija (use less Parmesan than asked for in the recipe because it is saltier). Alternatively, you may skip the cheese and substitute an excellent vegan mayonnaise.

WHERE TO FIND COTIJA CHEESE: Shops that specialise in Mexican goods or well-stocked supermarket stores should carry Cotija. I got near the goat cheese at Whole Foods, and I purchased it. If you can’t locate it, use finely grated Parmesan or crumbled feta cheese.
