Ingredients:

1 lb. prawns

a can of coconut milk

1 tbsp. Thai red curry paste

fish sauce-1 tbsp.

1 tbsp. of brown sugar

a tsp. of ground ginger

1 clove garlic, minced

lemongrass, galangal, garlic, shallots, kaffir lime leaves, cumin, coriander seeds, and shrimp paste. 

Instructions:

1. In a large skillet or wok, sauté garlic and ginger in oil until fragrant.

2. Add prawns and cook until pink.

3. Add curry paste and cook for 1 minute.

4. Add coconut milk, fish sauce, brown sugar, and lime juice. Simmer for 5 minutes.

5. Serve over steamed rice and garnish with cilantro.
