Ingredients

  • 32 ounces fresh, ripe strawberries, washed, hulled and dried
  • 3 ounces orange juice
  • 1 (14-ounce) box of graham crackers
  • 3 cups heavy whipping cream
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract

Directions For Strawberry Shortcake

Prepare the filling

  • Merge the diced strawberries and sugar and put them aside while you prepare the rest of the stuffing.
  • Now, grab a large bowl, and add the cream cheese and sugar to it.
  • Beat the mixture until incorporated and smooth.
  • Take another bowl, mix the whipped cream, sugar and vanilla extract and whip on high speed until it becomes stiff.
  • Add approximately 1/4 of the whipped cream to the cream cheese combination and fold the mixture to combine. Keep on adding the leftovers of the whipped cream to the mixture. 
  • Beat until all the mixture has been combined.
  • Add the strawberries (without the juices) to the cream cheese mixture and gently fold them together.

Assemble and Chill the Cake

  • Spread a layer of ladyfingers in the bottom of an 8×8 glass pan.
  • Add almost half of the strawberry cream cheese mixture to the top of the ladyfingers layer and spread it evenly.
  • Add one more layer of ladyfingers above the strawberry layer, then repeat the step of adding strawberry cream cheese and smoothen it.
  • Wrap the pan tightly and keep it in the fridge overnight. 
  • Keep it chilled when you serve. You can even keep it in the refrigerator for a day or a few days.

Recipe Notes

  • I cut up the strawberries in my bowl and beaters for whipping the cream and cool them in the freezer. It’s a good idea to keep extras on hand in case, you can’t resist swallowing them. Whip the cream to a light, frothy consistency. Using an electric mixer takes less than five minutes. You may now start assembling.
  • The graham crackers won’t slide about when you try to add the next layer if you spread a thin layer of whipped cream on the bottom of the pan. So, a thin layer of graham crackers followed by a dollop of whipped cream. Some of them will need to be chopped to suit the gaps.
  • Place a layer of whipped cream on top, followed by a layer of strawberry slices. Repeat the layering process from there, finishing with a layer of attractively placed strawberries. Refrigerate for at least four hours or overnight with a plastic wrap covering. Your friends and family will be grateful, the crackers will resemble a cake, and the strawberries will have given the cream its fresh flavour.
