Ingredient :
2 large chicken breasts, sliced finely
Finely slice one red onion.
One red pepper, sliced.
1 red chili, finely sliced (optional)
Whisk together the following ingredients for the marinade:
1 tablespoon of smoked paprika
1 tablespoon ground coriander
A pinch of ground cumin.
two medium garlic cloves, crushed
Four tablespoons of olive oil.
1 lime, juiced sauce
Add 4-5 drops of Tabasco sauce
Serve with:
Six medium tortillas.
Mixed salad in a bag.
A 230g tub of fresh salsa.
Steps to follow:
1. Preheat oven to 200C/180C fan/gas 6.
2. In a bowl, mix together the smoked paprika, ground coriander, cumin, garlic, olive oil, lime juice, Tabasco sauce, salt, and pepper.
3. Add the 2 large chicken breasts, onion, red pepper, and chili (if using) to the marinade and stir to coat.
4. Wrap the 6 medium tortillas in foil and place them in the oven for 10 minutes to warm through.
5. Remove from the oven and fill each tortilla with the chicken mixture.
6. Serve immediately.
