– 1 tsp of vegetable oil – 1 finely chopped red onion – 2 cloves of finely chopped garlic – 2 finely chopped cloves of fresh ginger – 1 finely chopped red chili – 4 finely chopped jalapenos peppers – 1 tsp of ground cumin – 1 tsp of ground coriander – 1 tsp of chili powder – 1 tsp of ground turmeric – 2 finely chopped chipotle peppers in adobo sauce – 1 tsp of ground black pepper – 2 finely chopped carrots – 1 finely chopped zucchini – 1 cup of chopped mixed bell peppers – 1 finely chopped celery stalk – 2 finely chopped and deveined chicken breasts – 1 cup of mixed chopped cilantro, parsley, and basil – 1 finely chopped red and yellow pepper – 1 cup of black beans – 2 and a half cups of breadcrumbs – 2 chopped and lightly salted eggs – 1 finely chopped garlic clove – 2 finely chopped and lightly salted eggs – 1 finely chopped lime

How to Make It

This recipe is best served with rice, mashed sweet potatoes, or sourdough bread. 

  • First, you’ll need to cook the black beans in a large saucepan with a little water and a pinch of salt for about 30 minutes or until tender. Next, you’ll want to heat a large pan or skillet over medium heat and add your vegetable oil. Cook the onion, garlic, and fresh ginger until fragrant. Add the chili and jalapenos, followed by the cumin, coriander, and chili powder. Cook for another minute, stirring occasionally, until fragrant. 
  • Next, add the ground turmeric, chipotle peppers, and black pepper and cook for another minute. Now add the carrots, zucchini, and celery and cook until the carrots are tender. 
  • Remove the pan from the heat and let the mixture cool while you prepare your meatballs.

  • In a large bowl, use your hands to mix the chopped cilantro, basil, red and yellow pepper, black beans, breadcrumbs, eggs, and lightly salted and finely chopped garlic clove. Now add the cooled vegetable mixture, along with the chopped and lightly salted eggs, lime juice, and a dash of salt and pepper. 
  • Stir the mixture well to combine. Using a large spoon, carefully portion out the mixture into 1-inch balls and place them on a large plate. Place the plate in the fridge for about 30 minutes to help the meatballs keep their shape while cooking. 
  • Next, heat a large skillet or pan over medium heat and add a little bit of vegetable oil. Add your meatballs to the pan and cook for about 10 minutes or until browned. Turn the meatballs over and cook them for another 10 minutes or until browned.

The vegetable mixture can be made up to 3 days in advance and stored in the fridge. The meatballs can be cooked up to 24 hours in advance and stored in the fridge in an airtight container. The black beans can be prepared up to 2 days in advance.
