This homemade hamburger soup is easy to make in no time at all. You just need a few simple ingredients and your favourite crockpot or oven. The great thing about this dish is that it’s full of flavour but not too heavy in calories or fat content. It’s also very economical because you can use cheaper cuts of meat like chicken breasts without sacrificing taste.

A hearty bowl of hamburger soup is perfect for every season. It’s a warming and comforting soup recipe that is perfect for any occasion.

This soup has everything from protein to fibre and vitamins A and C. It’s also full of flavour thanks to the onions, garlic, basil and oregano added at the end of cooking time. You can even mix in some extra-lean ground beef if desired.

Ingredients

  • 2 tbsp olive oil
  • 1 lb ground meat or ground beef
  • 1 large sweet onion
  • 2 cloves garlic
  • 3 tbsp tomato paste
  • 2 large carrots
  • 2 stalks celery
  • 1 bell pepper
  • 12 oz gold potato
  • 1 can crushed tomatoes 
  • 1 tsp kosher salt
  • 1 tsp ground pepper
  • 1 tbsp Italian seasoning
  • 8 oz green beans, trimmed and chopped into bite-sized pieces

Instructions to Make Hamburger Soup

  • Dutch oven heated to a medium-high temperature. After the olive oil has shimmered, add it.
  • Add the chicken breasts or ground beef, whatever you like, and cook for 6-7 minutes, stirring regularly to break up the meat into pieces.
  • Add the onion to the meat and cook for 6-7 minutes, stirring periodically, until the onion is tender. One minute later, add the garlic and continue to stir.
  • Cook the meat and onions with the tomato paste for approximately two minutes, or until the colour intensifies.
  • Add the potatoes, carrots, celery, and bell pepper after which add the pureed tomatoes, salt, and Italian seasoning on top. Stir the soup thoroughly before adding a bay leaf on top.
  • Bring the soup to a boil by turning up the heat to high. The potatoes should be simmered for 20 minutes at medium heat.
  • Stir in the green beans after adding them to the soup. Boil the green beans for a further five minutes to ensure complete cooking.
  • Test the food for seasoning and, if necessary, season with more salt and pepper. Pour soup into dishes and serve right away.

Recipe Notes!

  • If a 14.5-oz can of crushed tomatoes is unavailable, you may simply puree a can of chopped tomatoes in a blender.
  • Fresh green beans can be swapped out for frozen ones. Lower the amount of time in the simmer to 2 to 3 minutes, or until the green beans are barely cooked.

  • LEFTOVERS: You may keep leftovers in the refrigerator for up to 4 days in a sealed container.
  • FREEZER: Keep in an airtight container for up to three months. Defrost in the refrigerator overnight, then reheat on the hob over medium heat.
