To make a omelette, you’ll need:
– 1 onion, finely sliced
– 1 red pepper, chopped
– 500g potato, sliced into thin rounds
– 1 knob of butter
– 1 x 25g pack chives
– 8-9 eggs
Instructions:
- Simply fry the onions and pepper in the butter over low heat for 10-15 minutes, until they’re softened and starting to brown.
- After that add the potato slices and cook for a further 5 minutes.
- Once everything is cooked through, beat 8 eggs and pour them over the vegetables.
- Gently shake the pan so that the eggs cover all of the ingredients, then leave to cook for 8 minutes until set.
- Slide the omelette out onto a plate and enjoy!
