Ingredients:

9-12 digestive biscuits, lightly crushed

50g butter, melted

6 tbsp strawberry jam (or any flavor you like)

2 eggs, beaten

50g caster sugar

225g cornflakes (or other plain cereal like Special K or Weetabix)

  • Place the crushed biscuits in a medium-sized bowl, then mix in the melted butter and vanilla extract.
  • Spread the mixture onto one half of your tart case, then top with another layer of biscuits (or use more if you want to make an extra thick crust).
  • Bake at 375°F for 15 minutes or until lightly golden brown on top

Cornflakes are a good choice. If you can’t find cornflakes, other plain cereals such as Special K or Weetabix will work too.

To make the tart, simply mix all of the ingredients together in a bowl until combined. Bake at 180 degrees Celsius for 15 minutes then remove from oven and allow to cool before adding jam/jelly/jammy bits of whatever flavor you want!

How to make it?

  • To make the cornflake tart, simply preheat your oven to 180C/160C fan/gas 4. Then unroll the puff pastry and press it into a 23cm loose-bottomed tart tin. Trim away any excess pastry, leaving just a small amount hanging over the rim.
  • Next, mix together the cornflakes, sugar, and melted butter. Then spread this mixture over the pastry base. Finally, brush the beaten egg over the top of the tart.
  • Bake in the oven for 20-25 minutes, or until the pastry is golden brown and the cornflake filling is cooked through. Serve warm or cold, with a dollop of cream or ice cream. Enjoy!
