Ingredients:
9-12 digestive biscuits, lightly crushed
50g butter, melted
6 tbsp strawberry jam (or any flavor you like)
2 eggs, beaten
50g caster sugar
225g cornflakes (or other plain cereal like Special K or Weetabix)

- Place the crushed biscuits in a medium-sized bowl, then mix in the melted butter and vanilla extract.

- To make the cornflake tart, simply preheat your oven to 180C/160C fan/gas 4. Then unroll the puff pastry and press it into a 23cm loose-bottomed tart tin. Trim away any excess pastry, leaving just a small amount hanging over the rim.
- Next, mix together the cornflakes, sugar, and melted butter. Then spread this mixture over the pastry base. Finally, brush the beaten egg over the top of the tart.
