Ingredients

  • 2 tbsp chunky peanut butter
  • 1 garlic clove, finely grated
  • 1 tsp Madras curry powder
  • few shakes of soy sauce
  • 2 tsp lime juice
  • 2 skinless, chicken breasts, cut into thick strips
  • 10cm cucumber, cut into fingers
  • Sweet chili sauce, to serve

Directions For Chicken Satay Strips Recipe

  • Preheat the oven to 200 °C (180 °F) (gas 4) and line with parchment paper.
  • In the large bowl, combine 2 tbsp chunky peanut butter, 1 garlic clove that has been finely shredded, 1 tsp Madras curry powder, a few dashes of soy sauce, and 2 tsp lime juice. 
  • If necessary, add a small amount of boiling water to individual nut butter to achieve the desired coating consistency.
  • Mix well before adding two skinless chicken breast fillets. Spread on the baking sheet, spaced apart, and bake for 8 to 10 minutes, or until cooked but still juicy.
  • Serve heated with a finger-sized (10 cm) cucumber and sweet chili sauce. 
  • Alternately, allow to cool and store for up to two days in the refrigerator.
