Ingredients

  • 1 cup of bajra (pearl millet), it should be soaked overnight

How To Make Bajra Khichdi?

Preparation

1. First of all, soak bajra overnight or at least for 6–8 hours. When soaked, drain and wash them. Then coarsely grind or crush them in a mortar-pestle for faster cooking.

2. Wash and rinse moong dal properly.

Tempering

1. Take a thick bottomed pot or a pressure cooker and heat ghee in it.

2. Add cumin seeds and mustard seeds, roast them until they splutter.

1. Once the tempering is done add finely chopped vegetables, soaked bajra, and rinsed moong dal in it. Stir and mix it well to coat everything in the spices.

2. Now pour the water in it, stir and add salt according to your taste and mix it well.

3. Now close the lid and pressure cook it for at least 5–6 whistles on medium flame, or cover and simmer it for at least 35–40 minutes until the grains and lentils are soft and porridge-like in texture.

4. Once you turn off the flame, let the pressure release naturally. If you think it is too thick, you can add a little hot water in it. Don’t forget to adjust the seasoning.

1. To enhance flavor, depth and richness stir in some extra ghee.
